As per usual, from 1 December the mincepies have been being made, eaten and replaced. Despite my efforts to describe it as a health food full of fruit and nuts etc, they are, of course, an indulgence. Definitely a good way to start to feel festive is to have a coffee break (christmas mug of course) and a hot mince pie, maybe with a little clotted cream…..
The bane of mincepie making, is trying to persuade them to let go of the tin, particularly when my son makes a batch, and he makes a decent mince pie, but he is not that great at sealing the lids….
This year, I invested in a silicone muffin tray, and it is wonderful. Ye…es… it is revolting pink….and girlie…but I can turn my mind from that, as the mincepies pop out, no problem at all. So we have no casualties, no need to soak the tin.. Hurrah!. The mincepie production line is unstoppable. Well until we run out of homemade mincemeat.
