Personally I am not very found of eating raspberries fresh, and they have been going into the freezer for cooking – raspberry crumble is a favourite. But the exception to the rule is pavlova, and I particularly wanted to make a blueberry and raspberry pavlova, but it seemed we were thwarted at each attempt.
First off we had the great meringue disaster. Then I kept forgetting the save one of the fruits and stashed them in the freezer before I remember the plan…today it was not very much summery dessert weather..more like October and a tummy warming stolid pud in order, but as the raspberries are just coming to an end , it was now or never.
Which of course meant picking fruit in the rain. Then drying it off carefully..
Himself has not lost his meringue making mojo, and the pavlova was had. And yes, blueberry and raspberry palvola, or palaver as it is known now, is a great combination.
