Despite rumours that there will be a poor blackberry harvest, our hedges are full of bramble blossom, humming with bees, and heavy with unripe fruit. Which brings to mind the small blackberry mountain we have in the freezer. I may yet have to resort to making some wine, to make space for the new harvest, in the meantime we are making lots of blackberry cordial, and I am trying out some recipes.
After the chocolate blackberry trifle the other day, I have decided that chocolate is a good companion (isn’t it always?!) and decided to try chocolate blackberry upsidedown cake.
The result.. a little seedy in the fruit layer.. but that’s blackberries for you, a delicious moist cake. Seconds and thirds were had by the rest of the family.. and it was declared one to do again !
