In my on going quest to do more with the blackberries I have hoarded, I have tried a couple of recipes out, and can now tick off numbers 9 and 18 on the list.
First off we had blackberry pancakes , based on the same recipe as the wild strawberry ones. They were nice.. but not that special… the blackberries a bit sharp.
On Sunday we had pear and blackberry crumble. Sweet, delicious comfort food. and what a doddle to make if you have the poached pears already stashed in the freezer. I guess it would work with tinned ones, if they came in syrup too. That syrup meant there was no need to add any other sugar to the fruit, and the crumble topping was crispy on the top and very pudding like underneath. And yes mine leaked.. but that jammy topping just added to it.
so will be doing this one again. Unfortunately it only used a few blackberries.. so the experiments continue.
Aaah, but it’s not a proper crumble unless it leaks round the sides 🙂 (have tried to convince family it’s not a proper sponge unless it’s sunk in the middle, too!)
Sounds a nice combination – will have to try it.
