We’ve been out picnicking, by the river Dart.
We do like our outdoor food – and going for a walk and having a picnic is a budget form of entertainment that we all like. We had ideas of picnic barbecueing, but it was slightly spitting with rain when we left home. OK so most people would probably have stayed home, but all three of us do best ‘sticking to the plan’ – so we compromised and swapped the barbecue for picnic food.
I took the sausages and bacon we had planned and cooked them, along with some soft boiled eggs, and then arranged them on puff pastry with sliced tomato and cheese and cooked them until all puffed up and golden. A sort of brunch slice. That went down a treat. All the bad calories of a fry up.. with extra pastry and cheese calories thrown in too!

And afterwards, blueberry upsidedown cake. I am completely taken with these upside down cakes and will carry on trying out different versions, as they are a doddle to put together, the resulting cake is moist and yummy with a lovely topping.. and uses up some of the fruit mountain lurking in the freezer. And blue food always has to be a winner.
