The ‘cull ewe’ we were offered is now back from the slaughterhouse/butchers minus its personality, and in neat packages. It looks pretty good, but with a fat layer of.. well.. fat. To be expected. We have liver, heart, two breasts, 4 leg joints, 4 shoulder joints some miscellaneous bits and about 7 meals worth of chops. Not bad at all, for the price of slaughter and butcher. I wonder if I should make soap from all that fat.. I wonder how tender the meat will be, I wonder if I will like the taste.
