cider maturation

Last year was my first attempt at cider. We even made our own press (have you seen the price of them!) I started crushing apples in August, by October it had finished bubbling in the demijohn and I bottled it. It was drinkable then, but a bit sharp.
I found a bottle the other day, it got moved when the builders were in.
Now the sharpness has subsided (although I cannot grasp how this can be… don’t understand the science.. don’t care either!) and it is lightly sparkling from the bottle conditioning, and very drinkable. But strong. Not sure how strong, as I have not measured it.. but clutching head strong….
